Ben McCarthy – Executive Chef
Ben heads up a dynamic kitchen brigade. Apart from the challenge of overseeing Bushfire Flame Grill, one of the busiest and most exciting restaurants in Cairns, Ben has a passion for designing innovative menus for events of all sizes. Fresh ingredients, tropical fruits, herbs, seafood and beef sourced from local suppliers constantly inspire Ben to produce unique and interesting menus that reflect our region.
Ben understands the dynamics of off-site catering. Precision timing, quality control, hygiene standards and organisation are the key ingredients for successful execution of events.
Cathy Alexander – Events Manager
Cathy has an impressive background which includes 25 years’ experience in event management.
This encompasses the design of special events for both domestic and international incentive clients – elaborately themed off-site dinners, lunches, product launches, entertainment and special effects.
Before joining the Tropical Catering & Events team, Cathy was head of Sales and Business Development at Events NQ, Cairns leading exhibition equipment hire company. This involved her overseeing ENQ’s own signature events – Sheraton Mirage’s Longest Lunch, Food, Wine and a Taste of Port – Trinity Lunch and the annual NQ Wedding Expo.
Cathy’s experience includes 10 years with Hannafords Special Events where she delivered offsite catering solutions to many remote and challenging locales. She was also instrumental in the creation and launch of the award winning, Flames of the Forest, the region’s most successful off-site dinner venue.
Joanne Neill – Business Development Manager
Jo brings to the team more than 20 years of hospitality experience spanning sales & marketing, F&B operations and product management. She has held roles in the tourism industry both locally and in the United States.
Since arriving in Cairns in 2007, Jo has worked extensively in the Conferencing & Events industry. Her operational experience combined with her project management skills complement the Tropical Catering and Events team.
